Description

We are so excited for this coffee!  Gâteau àla Cannelle was Blind Coffee Roasters’ entry at the Golden Bean World Cup competition in February 2025 in Guatemala.  That is the first time we’ve been invited to enter the World Cup, and we brought our A Game.  This coffee reminds us of a cinnamon cake, and we won a freaking bronze for it in espresso!  We only have a limited suppy, so pick it up today!

Processing

Gâteau àla Cannelle is a honey double anaerobic cofermentation process.  This means first, the farmers place the coffee cherries into sealed fermentation tanks for 50 hours.  Then they depulp the coffee and ferment again with a blend of spices for another 50 hours.  While it ferments, CO2 pressure builds up and the sugars and spice flavors are forced into the coffee bean.  Finally, they dry the beans just like the honey process.

Roast Level

This Colombian coffee is a City Roast, which is on the light side of medium.  We pull the beans from the roaster just as they turn a milk chocolate color.  At this point in the roast, the coffee’s authentic flavors shine without any smokiness or oil.  We find this roast level brings out the spice flavors in a way that is balanced with sweetness and smoothness.

Traceability

Gâteau àla Cannelle is Fair Trade, and comes to us from Villa Betulia in Colombia.  They have high standards and work with rare and interesting coffee varieties.  We love to see what they produce!

Bragging Rights

Oh my god, y’all, we won an international medal!  We’ve competed in our regional Golden Bean competition for years.  Last year, in 2024, we earned our first gold medal, and that gained us entry to the World Series.  We are so proud to say that Gâteau àla Cannelle earned a bronze in espresso at the Golden Bean World Series 2025!

We will deliver orders from the Portland Metro Area within business days free of charge.  You can also choose local pickup.  We will ship all other orders within 1-3 business days and provide tracking information via USPS Ground Advantage or Priority Mail.  Free shipping is also available for orders of $50 or more.
