Description
One customer told us that this is the coffee they have been waiting for us to roast and carry. Most Sumatras are sold as dark roast, but we want you to be able to taste the nuances in beans from this region. Our Sumatra comes from Mandheling, known for its flavorful and high quality beans.
Processing
Golden Bean Sumatra is a wet-hulled process. This kind of processing is rarely done outside Indonesia. That’s because Indonesia’s climate is so rainy and humid that other processing methods, which usually involve drying the beans on the farm, are not feasible. Instead, the farmers pick the cherries and run them through a de-pulper that removes the skin. Next they ferment the beans overnight to break down the fruit. Then they dry the coffee to just 50% moisture content before sending it to the coffee mill. At the mill, they dry the coffee a little more and then send it through a wet huller to remove the parchment layer around the bean. Finally, the coffee is air dried to 12% moisture and is ready to sell. Wet hull processing gives the beans their classic Sumatra funk and low acidity.
Roast Level
Golden Bean Sumatra is a City Roast. City Roasts are a level of medium roast that we pull out of the roaster when the beans are about the color of milk chocolate. We find this roast level best brings out the coffee’s natural flavors without any unpleasant smokiness. We roast Sumatran coffee so that the earthy and pine notes shine through.
